This is traditional Medium Dry Amontillado Sherry. The "must" or grape juice originates from our vineyard in the renowned Macharnudo area of Jerez, and is aged under a veil of `flor` for more than eight years. Further maturing, allowing oxidation of the wine takes place for at least another eight years. We then add just a touch of our sweet Pedro Ximenez Sherry to make this amontillado a little less dry and very slightly sweet. Dark amber in colour, it has complex aromas of nuts, sweet spices and toffee, while it is well balanced, smooth and persistent on the palate. very complex to the nose with clear hints of hazelnut. It makes a good aperitif and goes very well with soups, patés, foie gras and intense creamy cheeses like Brie or Camambert.Best served very slightly chilled.
